Oh, how I love Mexican food. Although, if you go to Mexico (which I never have) they will look at you like you're crazy if you ask for a hard taco or a crunchy taco. A lot of the staff at my company is from Mexico and they teach me all about their actual cuisine. So I'll rephrase my previous statement. Oh, how I love American Mexican food. I love the crunch, the cheese, and the sour cream! Any time I can have sour cream in my meal then I am a happy camper. When I go out to eat I have to ask for a "gross amount of sour cream". If you just ask for extra then they give you this tiny ramekin with sour cream. What the f am I going to do with that?! I want A LOT of sour cream. Ok, enough about my odd obsession with sour cream. Taquitos. This recipe is one of my favorites. It has great flavor with an amazing crunch. It's a good Sunday gameday meal. I don't typically make this during the week because it isn't a quick meal but boy oh boy, is it good.
Ingredients
1/2 pound of chicken breasts or boneless chicken thighs
1/4 cup taco sauce
1/2 yellow onion, diced
2 ounces cream cheese
salt and pepper
4 large tortillas or 8 small tortillas
1/4 cup vegetable oil
Directions
In a large pot or a Dutch oven, add chicken, salsa, taco sauce, onion, cream cheese, and salt and pepper over low heat.
Cover and let cook for 90 minutes on your lowest setting.
Remove chicken from pot and shred chicken using two forks.
Add shredded chicken back to pot and mix it with the sauce.
In a large frying pan, add vegetable oil and heat over medium low.
Take tortilla and add a spoonful of chicken mixture down the center. Roll tortilla as tightly as possible without the chicken mixture coming out of the ends. Repeat with the rest of the tortillas and chicken.
Once the oil is nice and hot, add the rolled up tortilla to the pan and cook for 2 minutes.
Flip tortilla and continue to cook on all sides for 2 minutes.
Remove from oil and serve.
Notes
Serve with shredded lettuce, queso cheese, sour cream, or your favorite taco toppings.
Yes, this recipe can be baked instead of fried but I find it doesn't hold it's shape as well in the oven and it doesn't give you that satisfying crunch in every bite.
