The PERFECT Way to Cook Steak

Updated: Apr 27, 2019

Steak: every mans favorite. Right? If it were up to the hubs, we'd have steak every single night. Which for obvious reasons, would suck. I mean I need pasta, I need chicken, I need a vegetarian night. And probably most importantly, steak is expensive! I can't live on steak like he can. BUT all that being said, I do try to be a good wife and give him steak once a week.

Steak is something I've found many people shy away from cooking. It's intimidating, I get it. You just spent a bunch of money on a piece of meat, that everyone claims is the best, you don't want to be the person to mess it up. But luckily for you, you've found this page! I have the best fail proof way to make ANY kind of steak. It has a perfect crispy outside with a juicy tender inside! Now just follow my tips, and you will be cooking steak like a freakin pro!

Ingredients

  • Any cut of steak (see my below notes)

  • 1 tablespoon olive oil

  • 4 tablespoons butter, separated

  • SO much salt

  • SO much pepper

  • So much garlic powder

Directions

  1. Heat a pan (preferably cast iron) over medium high heat. Add oil and two tablespoons of butter.

  2. While pan is heating, take your seasonings and LET IT FREAKING RAIN. Lather the crap out of that hunk of meat. Seriously though. Have a heavy hand. Make sure the steak is completely bathed in the seasonings on both sides.

  3. Once the pan is steaming hot, add your steak. You might want to turn on your exhaust fan or crack a window at this point because things are about to get smokey!

  4. Now this step is important- once your steak is on the pan, WALK AWAY. DON'T TOUCH IT.

  5. Let the steak cook on that side for the amount of time stated in my notes below. Once it's cooked, flip the steak and cook for the remaining amount of time per the below notes.

  6. Add a tablespoon of butter to the top of the steak once you flip it. Spoon some of that yummy melted butter and oil and on top.

  7. Once the steak has cooked for the allotted time, remove from pan and place on a cutting board to rest. Add the last tablespoon of butter to the top of the steak.

  8. Let rest for 10 minutes. This is important! The cooking process continues when you let it rest AND it helps retain the moisture of the steak. If you don't let it rest, it will be undercooked to your preference and it will be chewy! No one will be happy at that point.

  9. Once rested, slice and serve.

Notes

  • Because steak is part of our weekly rotation, we buy London Broils. These are a great cut of meat for a great cost.

  • Resting is SO SO SO SO important. Don't ever skip that step! And if you do, you are not allowed to message me telling me my recipe sucks :)

  • For a crispy outside, it is really important NOT to touch the steak when added to the pan.

  • For medium rare steaks that are 1 1/2 inches thick, cook for 7 minutes PER side. For every extra degree of doneness, add a minute per side.

  • For medium rate steaks that are 1 inch thick, cook for 6 minutes PER side. For every extra degree of doneness, add a minute per side.

  • For very thin steaks, cook approximately 4 minutes per side for medium rare.

  • As always, recipe are guidelines. Make it your own!
